300g of this freeze-dried cheese is equivalent to 440g of fresh Parmigiano-Reggiano.
What's the difference between this cheese and Parmesan? None, apart from the name. Parmesan is a DOP cheese. Freeze-dried Parmigiano-Reggiano can't be called such, as it contains 0.5% moisture, as opposed to the 30% required for Parmesan.
